I thought this Instant Pot Good Luck Greens Soup was the perfect recipe to deliver to you this week. Many of you indicated in our Facebook Group that you wanted new Instant Pot recipes to create this January, plus, it’s the New Year so I figured this recipe was the perfect fit.
This recipe was inspired by another fellow dietitian, Meme Inge at Living Well Kitchen. Her recipes are always amazing and I thought with a few tweaks this recipe could perfect for you after bariatric surgery. I reduced the amount of beans in this recipe to lessen the carb load.
With that being said, one cup of this soup is about 16 g protein and about 17 g net carb. It packs in about 5 g fiber in each serving, which is great to help keep you regular.

I used swiss chard in this recipe because it has a mild flavor and tends to be a more mild flavor than collard greens, which is traditionally used in Good Luck Soups. It is high in iron which is an important nutrient for bariatric post-ops. You could also use spinach instead if that is what you have available.
If you want to meal prep this recipe ahead of time, you can easily throw it all in a ziplock bag and then toss the contents in the Instant Pot when you are ready to eat it. You only need to pressurize this recipe for 8 minutes. It’s SO fast.
If you are in the pureed or soft diet stage I would suggest omitting the sausage and use an extra can of beans instead and reduce the chicken broth. It will still have a great flavor.

Bariatric Diet Modifications
Pureed:
- Omit sausage and increase the black eyed peas by one can. Decrease the chicken broth to two cups and consider using frozen spinach instead of fresh swiss chard. Once cooked, use an immersion blender or regular blender until pureed to desired consistency.
Soft Diet:
- If your program does not allow the sausage lining at this stage then omit sausage and replace with one extra can of black eyed peas. Also suggest using 1 lb of frozen spinach instead of swiss chard.
Regular:
- Serve as is.

Ingredients
- 2 onions, peeled and chopped
- 2 teaspoons of minced garlic
- 12 oz chicken sausage (flavor of your choice)
- 2 bunches of swiss chard, de-ribbed and chopped
- 1, 15 oz can black eyed peas, drained and rinsed
- 1, 15 oz can white beans (great northern), drained and rinsed
- 1, 10 oz can diced tomatoes with green chilis
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon of paprika
- 1 bay leaf
- 3–4 cups of chicken broth
Instructions
- Put all ingredients in Instant Pot. Cook on high for 8 minutes. Slow release for 3-5 minutes. Enjoy.
