High Protein Egg Salad

Easy snack for the on the go.

Ingredients

  1. 5 hard boiled eggs
  2. 1/3 cup low-fat cottage cheese
  3. 1 teaspoon celery salt (can also use celery seed if ok with your doc)
  4. 1 teaspoon onion powder
  5. 1/8 teaspoon mustard

Instructions

  1. Cut up hard-boiled eggs
  2. Mix hard boil eggs with the rest of the ingredients in a small bowl
  3. Puree in food processor if in blended stage

Notes

Use in lettuce wraps if in solid food stage.
