Do you love Italian Food? If so, then I have the perfect recipe for you! My family is Italian and I could not imagine life without the classic flavors of basil, tomato and oregano. My love for Italian food (and I know many of yours too 😉 inspired this Weeknight Pasta Fagioli dish and I am so excited to share it with you.
If you have ever dined at Olive Garden then you may be familiar with their Pasta Fagioli dish. It’s a savory soup made with crushed tomatoes, kidney beans, italian seasonings and beef. Oh yeah and pasta too, which is not usually bariatric friendly….So I decided to re-create this recipe for you using ground turkey and without pasta. Honestly, even without the pasta it turned out amazing!
I cooked it in an Instant Pot (aka pressure cooker), to help reduce my time in the kitchen. Pressure cookers are excellent tools to have in the kitchen before and after bariatric surgery. If you do not have a pressure cooker, then no worries! You can also cook this on the stove top or slow cooker.
I guarantee this soup is something the whole family will enjoy.

Weeknight Pasta Fagioli
Yummy Italian soup that can fit in at almost any stage after bariatric surgery. Plus something the whole family will enjoy.

Ingredients
- 1 tsp olive oil
- 1 lb ground lean turkey meat
- 1 medium onion, finely chopped
- 2 carrots, chopped
- 1 celery stick, chopped
- 2 tsp Italian seasonings
- 1, 28 oz can crushed tomatoes
- 2 cups chicken broth
- 1, 14 oz red kidney beans, drained
- 1, 14 oz cannelini beans, drained (if you don’t have then substitute kidney beans)
Instructions
- Heat 1 tsp of olive oil in instant pot and place on saute setting. Then add turkey,onions, carrots, celery and Italian seasonings and saute until ground turkey is browned. About 10 min.
- Add crushed tomatoes and chicken broth. Place on lid and seal vent on pressure cooker. Change setting to “Manual” and cook on high for 15 min. If using slow cooker, cook for 3-4 hours on high.
- Slow release pressure cooker for 10 min. Once done cooking, remove lid and add beans to soup. Let sit for 5 min. Then serve.
- If blending, add mixture to blender and blend until smooth.
