Coconut Avocado Popsicle

A refreshing bariatric snack to have on hand!

Ingredients

Scale
  • 1 cup coconut milk
  • 1 avocado
  • Juice of 12 limes depending on your sour preference
  • 1 tsp of stevia/erythritol blend
  • Unsweetened Coconut flakes (optional, they just make it look pretty). I like Bob’s Red Mill.

Instructions

  • Blend all ingredients together. Then pour into popsicle containers. Makes 4-8 popsicles depending on your mold. Place molds in freezer.
  • Once frozen garnish with unsweetened coconut flakes.

Notes

You could also use Dixie cups with popsicle sticks if you don’t have molds.

Puréed:

  • Serve as is but without coconut flakes. Consider adding unflavored protein powder.

Soft diet:

  • Serve as is but without coconut flakes. Consider adding unflavored protein powder.

Regular

  • Serve as is
