Bariatric Low Carb Burrito Bowls

An easy on the go meal for after bariatric surgery.

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 packet of taco seasonings
  • 1/3 cup salsa
  • 1/4 cup plain Greek Yogurt
  • 1/3 cup red onion, chopped
  • 1/3 cup cherry tomatoes
  • 3/4 cup cooked black beans, rinsed
  • 1/2 cup lettuce

Instructions

  1. Brown ground meat in skillet over medium heat. Add taco seasonings and cook until meat is thoroughly cooked. Remove from heat and let in cool.
  2. Dispersed between 4 small containers (I used mason jars) layer the following ingredients; salsa, Greek Yogurt, red onion, cherry tomatoes, beans, seasoned ground meat, lettuce. Place lid on jar.
  3. Store in fridge for up to four days. When ready to use, dump out contents and enjoy.
