These Bariatric Low Carb Burrito Bowls are super easy to make and best of all taste good. I don’t know about you but Mexican food is always on the menu in my house and I am always looking for options that are lower in carbs, hence the Low Carb Burrito Bowl.
How do you make the taco meat in the Low Carb Burrito Bowl?
If you’ve never made tacos from scratch before then you are in for a treat. It’s so simple and fast you will feel like you are cheating.
First, you need to pick out your taco seasonings. You can buy taco seasonings from the grocery store. This is by far the easiest option, but some of them are better than others. Look for ones that have no added sugar and don’t have a ton of salt. I like the Riega Taco Seasoning that is sold in my local grocery store. You can also buy it at Walmart or Amazon (affiliate link).

If you’re feeling ambitious you can also make you own taco seasoning. I personally prefer this method but don’t always have the time to do it. It’s cheaper and it gives me more control of the ingredients. This one tasted good from Gimme Delicious.
Okay, now that you have your taco seasonings you are going to mix it with your ground meat. Heat up a frying pan over medium heat. Then add ground meat and mix in taco seasonings. Cook until meat is thoroughly cooked through.
Bariatric Diet Modifications
If you are less than six months after bariatric surgery, then you may want to consider using turkey meat instead of beef. Beef is usually a little harder to digest but please follow your surgeons guidelines.

Ingredients
- 1 lb ground beef or turkey
- 1 packet of taco seasonings
- 1/3 cup salsa
- 1/4 cup plain Greek Yogurt
- 1/3 cup red onion, chopped
- 1/3 cup cherry tomatoes
- 3/4 cup cooked black beans, rinsed
- 1/2 cup lettuce
Instructions
- Brown ground meat in skillet over medium heat. Add taco seasonings and cook until meat is thoroughly cooked. Remove from heat and let in cool.
- Dispersed between 4 small containers (I used mason jars) layer the following ingredients; salsa, Greek Yogurt, red onion, cherry tomatoes, beans, seasoned ground meat, lettuce. Place lid on jar.
- Store in fridge for up to four days. When ready to use, dump out contents and enjoy.
